Across the estate, farming is approached with a long-term view, balancing productivity with care, stewardship and grazing systems designed to work with the landscape rather than against it. The emphasis is not simply on output, but on managing the land responsibly for the future.

Part of the wider Great Oakley estate operation, The Saltby Dairy is based around the village of Saltby in Leicestershire. Managed by Matt and his partner Johanne, the herd is made up of cross-bred grazing cows selected for resilience, consistency and milk quality rather than maximum output alone. Around 400 cows are currently in milk, producing high quality dairy suited to premium British production.
